Prep your potatoes: slice them thin, about 1/8 inch thick. Pat them dry with paper towels to remove excess starch.

Brown the ground meat in a skillet with 1 tablespoon of oil over medium heat. Season with salt, pepper, and 1/2 teaspoon of paprika. Cook until it gets a nice color, then set aside.

Make the sauce: whisk together sour cream, heavy cream, the remaining paprika, garlic powder, vegetable oil, salt, and pepper in a bowl. Taste it and adjust the seasoning if needed.

In a large bowl, gently toss the potato slices with about two-thirds of the sauce. Add the cooked meat and mix everything together evenly.

Lightly oil your air fryer basket or baking pan. Layer the potato and meat mixture in, drizzling the remaining sauce between layers. Top everything with grated cheese.

Air fry at 350°F for about 20–30 minutes. The exact time depends on how thin you sliced the potatoes and your air fryer's power—watch for tender potatoes and a golden cheese top. If needed, cover with foil halfway through so the potatoes cook through without the cheese burning.

Test with a knife or fork—the potatoes should pierce easily. Let the dish rest for 3–5 minutes before serving.
