Grilled Mackerel
Fragrant and tender fish in a spiced marinade, cooked over coals. A fantastic choice for a picnic or a countryside dinner.

Method
Clean the mackerel by cutting off the head and carefully gutting it. Be sure to remove the dark membrane inside, as it can taste bitter.
Mix together the salt, spices, 1 tbsp of oil, and 1 tbsp of lemon juice. Thoroughly rub the fish both inside and out.
Slice the lemon into half-moons and place them inside the cavity along with the bay leaf.
Place the fish in a bag or container and let it marinate for at least 30 minutes.
Before grilling, remove the lemon slices and bay leaf.
Place the fish on the grill grate and cook on both sides, turning frequently to keep the flesh tender and prevent the skin from burning.
Serve hot with vegetables, Dijon mustard, or a garlic and sour cream sauce.
