Cut ripe tomatoes into quarters and gently squeeze out the excess juices, leaving just the flesh. Finely chop the onion.

In a bowl with the gently squeezed tomatoes and onion, add tomato paste, flour, sugar, eggs, minced garlic, and finely chopped herbs—basil, mint, parsley, and green onions. Season with salt and pepper to taste, drizzle with a touch of olive oil, and mix into a batter.

Using a tablespoon, carefully drop the fritters into hot bubbling olive oil and fry for about 2 minutes on each side until golden and crispy.

Grate the cucumber and squeeze it thoroughly with your hands to remove excess moisture. Chop the dill. In a bowl, combine the squeezed cucumber, dill, Greek yogurt, olive oil, salt, pepper, and pressed garlic. Stir until smooth and well combined.
