Method

1

Strip the grapes from the stems, rinse them in warm or cold water to remove dust and wild yeast, then transfer to a clean, washed jar.

2

Bring water to a boil and pour it over the berries up to the shoulder of the jar, cover with a lid, and let it steam for 10–15 minutes.

3

In a pot, combine the sugar and citric acid, pour in the hot water from the jar, bring to a boil, and stir until the sugar is completely dissolved.

4

Pour the boiling syrup back into the jar, seal it immediately, turn it upside down, and check that it's properly sealed.

5

Let it cool to room temperature, then move it to the pantry for storage.
