Method

Strip the grapes from the stems, rinse them in warm or cold water to remove dust and wild yeasts, then transfer to a clean, washed jar.

Bring water to a boil and pour it over the berries up to the neck of the jar, cover with the lid, and let it steam for 10–15 minutes.

In a pot, combine the sugar and citric acid, pour in the hot water from the jar, bring to a boil, and stir until the sugar dissolves completely.

Pour the boiling syrup back into the jar, seal immediately with the lid, flip it upside down, and check that it's airtight.

Let it cool to room temperature, then move it to the pantry for storage.
