Gooseberry Jam

Method

Sort through the gooseberries, discard any damaged berries, and trim off the stems on both ends. Wash and pat dry.

Transfer the berries to a heavy-bottomed pot, add half of the sugar, stir, and let sit for 3–4 hours.

Pour in the water, place over medium heat, and bring to a boil, stirring occasionally.

Add the remaining sugar, stir, and simmer on low heat for 5 minutes, skimming off the foam. Remove from the heat and let cool.

Bring the jam back to a boil, simmer for 5 minutes, and let cool again.

For the third time, put it back on the heat, add the cinnamon stick, bring to a boil, and cook for another 5 minutes.

Ladle the hot jam into sterilized jars and seal tightly with lids.
