Georgian Adjika for the Winter

Method

Spread the chili peppers out on a large tray and let them air-dry in the shade for 3 days.

Coat your hands with vegetable oil or put on gloves, then remove the stems.

Bring the vinegar to a boil and let it cool.

Pass all the prepared ingredients through a meat grinder or process in a food processor, then mix thoroughly with a wooden spoon.

Add the coriander and salt, pour in the vinegar, and let it infuse for 2–3 days, stirring the adjika occasionally.

Pack into jars, pour a thin layer of vegetable oil over the top, and seal.

Store in a cool, dark place.
