Method
Take your garlic, trim off the root end, separate the cloves, give each one a good crush with the flat of your knife, and slip off the skin.
Blend the peeled garlic smooth with an immersion blender, or run it through a meat grinder until you've got a nice paste.
Split the garlic paste into three equal portions, adding a splash of water if needed to loosen it up.
Stir fresh dill or parsley into one portion, paprika into another, and mix each one thoroughly.
Spread the garlic mixture onto a board lined with plastic wrap, or use a freezer bag, and press it into a layer about half an inch thick.
Cover the top with wrap, set a cutting board on top to keep the surface even, and pop it into the freezer until solid.
Once frozen solid, cut the slab into strips or cubes however you like, then transfer to a container for storage back in the freezer.
