Method

Preheat the oven to 340°F (170°C). Line a large 1-quart baking pan with parchment paper.

Chop the dried apricots and dates, and place them in a small saucepan. Zest the orange and add the zest to the saucepan.

Juice the oranges into a cup and add enough water to bring the total liquid volume to 350 ml. Pour this into the saucepan and bring to a boil, then remove from the heat and set aside.

Combine the flour, baking powder, and mixed spice in a bowl. Add the raisins and ground almonds, and mix well.

Add the contents of the saucepan to the bowl and stir thoroughly. Transfer the batter into the prepared pan.

Bake for 45 minutes, or until a toothpick inserted into the center comes out clean. The loaf will not rise significantly. Leave it in the pan for 5–10 minutes, then transfer to a wire rack to cool.
