Method

Pour water over the gelatin and let it bloom for 10 minutes.

Blend the strawberries until completely smooth.

Warm the gelatin until fully dissolved, without bringing it to a boil.

Combine the strawberry puree, Greek yogurt, and sugar. Add the gelatin and mix thoroughly.

Separately whip the cream to soft peaks and gently fold it into the strawberry mixture.

Divide the mixture among clear glasses, filling them about two thirds full. Chill in the refrigerator for 2–3 hours until the layer is completely set. Place the dessert in the freezer for 30–60 minutes.

Chill the cream, mixing bowl, and beaters.

Whip the cream at medium speed. As it begins to thicken, add the powdered sugar and, if desired, vanilla sugar. Continue whipping to stiff peaks.

Transfer the cream to a piping bag fitted with a closed star tip and pipe a neat swirl on top of the strawberry layer.

Top with strawberry slices, stemmed cherries, blueberries, small cubes of mango or peach, and apple wedges.
