Method

1

Grease a 20-22 cm springform pan and line the bottom with parchment paper.

2

Preheat your oven to 180°C (350°F) using the conventional top/bottom heat setting.

3

In a bowl, whisk together the sifted flour, baking powder, salt, cinnamon, and nutmeg, if using.

4

Using a hand whisk or mixer, beat the butter for 1 minute on medium speed until creamy.

5

Add the sugar and beat on medium speed for another minute until fluffy and pale yellow.

6

Add the eggs one at a time, beating for about 45-60 seconds after each addition.

7

Stir in the vanilla, rum, or cognac, and beat for a couple of seconds.

8

Fold the flour mixture into the bowl and gently stir with a silicone spatula until just combined.

9

Fold in the diced apples.

10

Transfer the batter to the prepared pan, smooth the top, place on the middle rack of the oven, and bake for 40-45 minutes.

11

Let the cake cool in the pan for 10 minutes, then transfer to a plate, dust with powdered sugar, and serve with a scoop of ice cream.
