Method

Wash the quince thoroughly, scrubbing off the fuzzy coating with the abrasive side of a sponge.

Bake half of the fruit at 200°C for about thirty to forty minutes, let cool, cut into quarters, remove the seed cores, chop into pieces, and freeze in a bag—this is the unsweetened version, ideal for meat.

Quickly core the second half of the fruit, slice them, add sugar, pour in water, add a slice of lemon, and simmer for about twenty minutes, being careful not to overcook them.

Let cool, transfer to a container, and freeze—this version is great for baking and beverages.

Store the frozen preparations in the freezer for up to a year.
