Shell the green peas, and it's best to soak them for about 10 minutes.

Cover with water so it sits 2-3 fingers above the peas, bring to a boil, then add the citric acid and salt.

Simmer over low heat for 5 to 20 minutes depending on how mature the peas are.

Next, let the peas cool right in their cooking liquid, take them out, and pack them into small freezer bags in portions.

Transfer to the freezer, giving the bags a gentle shake while freezing so the peas stay loose and separate.
