Method

Rinse the apricots under running water, place them on paper towels, and pat them completely dry—the fruit must be totally moisture-free.

Slice each apricot in half, remove the pit, and trim away any bruised spots if present.

Let the halves sit for a few minutes to air-dry slightly so they aren't too wet, which prevents them from sticking together during freezing.

Transfer the apricots to a ziplock bag, seal it, place it flat on a cutting board, and pop it into the freezer.
