Method

Wash the apricots under running water, place them on paper towels, and pat them completely dry—the fruit must be totally dry.

Cut each apricot in half, remove the pit, and trim away any bruised spots if present.

Let the halves sit for a few minutes to dry slightly so they aren't too juicy—this prevents them from sticking together during freezing.

Transfer the apricots to a ziplock bag, seal it, place the bag on a cutting board, and put it in the freezer.
