Method

Gather all your ingredients. The dough is easy to mix in a food processor, but you can also do it by hand. Combine the flour, butter pieces, half of the sugar, and salt in a bowl, then rub into crumbs.

Add the kefir and egg (set aside half the egg yolk for the wash). Knead into a soft, slightly sticky dough. Wrap in plastic and chill in the fridge for 15–30 minutes.

While the dough is chilling, make the filling. Wash the orange, scald it with boiling water, and slice it up peel and all.

Transfer to the food processor, add the cornstarch and sugar. If the fruit is very juicy, drain off some of the juice so the mixture doesn't get too runny. Blend until smooth.

Roll out the dough to about 0.5 cm thick and spread the filling evenly over it. Roll it up into a log and cut into triangles. For a nicer look, use a fluted pastry wheel.

Place on a baking sheet and brush with the reserved yolk mixed with a tablespoon of water.

Bake at 160 °C (320 °F) for 20 minutes.
