Method

Combine the warm milk, water, and sugar. Stir in the yeast until well dissolved, then mix in the salt and melted butter.

Sift the flour. Stir the dough together with a spatula first, then knead by hand on a lightly floured surface until smooth, and shape into a ball.

Place the dough into a deep, lightly oiled bowl. Cover with plastic wrap and let rise in a warm spot for 45 minutes.

While the dough rises, prepare the filling: finely chop the dill, grate the garlic, and mix them together with the butter.

Punch down the risen dough, shape it into a ball, and divide it into 8 equal pieces. Roll each piece into a small ball and place them on a lightly floured baking sheet.

Transfer the garlic mixture to a piping bag. Make crosswise incisions in the center of each ball using a sharp knife or kitchen shears, and pipe the filling into the center.

Bake for 25–30 minutes at 180 °C (350 °F). Serve the pampushki warm right away — they are the perfect match for borscht!
