Method

Dissolve the sugar in warm water, add the yeast, and let sit for 10–15 minutes until foamy.

Pour in the oil, add the salt, and mix well.

Gradually add the sifted flour and knead into an elastic dough.

Transfer to a greased bowl, cover, and leave in a warm place for 1.5 hours.

Punch down the dough, place it on parchment paper, stretch it into a sheet, and make deep diagonal cuts.

Carefully pull the edges of the cuts apart to open up the holes.

Brush with oil and sprinkle with sesame seeds (or flax seeds, coarse salt, or herbs).

Let rest for 15–20 minutes. Preheat the oven to 400 °F (200 °C).

Bake for about 20 minutes until golden brown.

Serve warm—ideal with soups.
