Method
The key is heating the kefir to 35–40°C and the water to 60°C. They need to be hot for fluffier pancakes with lots of holes. Don't worry if the kefir breaks apart a bit—they'll actually taste even better with slightly soured kefir.
Whisk the eggs together with sugar and salt.
Add baking soda to the hot water and stir.
Pour the warmed kefir into the eggs.
Add flour in batches. And salt.
Then add the water with baking soda.
Finally, stir in the vegetable oil.
Let it rest for 10 minutes before cooking. You can cook right away, but they won't be as fluffy.
