Method
Pour warm milk into a bowl, add the dry yeast and sugar, stir, cover with plastic wrap, and let sit for 10 minutes.
Beat the egg into the activated sponge, pour in the vegetable oil, and add salt; stir until smooth.
Add the flour and knead the dough. Incorporate the softened butter into the resulting dough and knead thoroughly once more.
Cover the finished dough with plastic wrap and let it rest for 1 hour.
For the filling, take low-fat cottage cheese, add the egg yolk, sugar, and orange or lemon zest, and mash with a fork until smooth.
Add the raisins to the cottage cheese mixture and stir.
Lightly oil the countertop, turn out the dough, and divide it into portions. Shape each piece into a ball and roll it out into a thin, round flatbread.
Make a cut to the center with a knife, place the filling on one side, and roll it up in a circle toward the center to form a horn shape. Make even slits on the other side without cutting all the way to the edges, and roll the pastry all the way up.
Arrange the prepared horns in a circular pattern in a baking pan and let them rest for 20 minutes.
Brush the tops with a mixture of sour cream and egg yolk, place in a preheated oven at 170°C (340°F), and bake for 40 minutes.
