Method

In a bowl, whisk together yogurt, egg, milk, melted butter, vegetable oil, and sparkling mineral water until well combined.

Fold in the grated kashkaval cheese and crumbled white brined cheese, breaking it up with a fork as you go.

Mix in the finely chopped parsley and baking powder, stirring gently to combine.

Layer the phyllo sheets, brushing each one generously with the cheese mixture all over.

After your last layer, spread any remaining filling on top, then roll the phyllo into a loose log.

Cut the roll into 3 pieces, wrap each in plastic wrap, and refrigerate for 1 hour.

Slice the rolls into even-sized portions and arrange on a parchment-lined baking sheet.

Whisk together egg and yogurt, then brush this mixture over the tops of the börek.

Bake in a preheated 200°C (400°F) oven for about 30 minutes until golden brown.
