Method
Warm the milk, add 1 tablespoon of sugar and dry yeast, mix thoroughly, and let it sit for 10 minutes.
In your mixing bowl, combine the egg yolks, remaining sugar, and vanilla extract, then whisk together.
Stir in the foamy yeast mixture.
Gradually add flour while mixing to form the dough.
Dust your work surface with flour, turn out the dough, and knead for about a minute.
Place 40 grams of soft butter on top of the dough and knead for 7–10 minutes.
Cover the dough with plastic wrap and let it rise in a warm place for 1.5 hours. Once ready, punch it down.
Roll the dough into a log, divide it into 6 pieces, then divide each piece into 3 smaller pieces.
Roll each piece into a rope, connect the ends to form a ring, and decorate with candied fruit or raisins.
Join the rings together at the center.
Add a piece of candied fruit or a raisin to the middle of each bun. Shape the remaining buns the same way.
Place the buns on a parchment-lined baking sheet, cover with a towel, and let them rest for 20 minutes.
Brush with beaten egg and bake at 350°F (180°C) for 20–25 minutes.
Once baked, dust the buns with powdered sugar if you like.
