Method

Slice the onion, carrot, and celery stalk into thin matchsticks.

Heat a little olive oil in a large skillet over medium-low heat, add the onion and cook, stirring, until softened and translucent. Don't let it brown.

Add the carrot and celery, season lightly with salt, and continue cooking until the vegetables are tender, about 5-7 minutes.

Pour in the wine, stir to combine, and let it reduce almost completely.

Add just enough water to the skillet to cover the vegetables. Arrange the fish spirals on top, season with salt and pepper, add a bay leaf. Lower the heat to the minimum, cover with a lid, and cook for 12-14 minutes.

If you'd like a more concentrated sauce, after removing the lid you can turn the heat up to high and let about half of the liquid reduce away.
