Method

Cook the tapioca pearls according to the package instructions. Rinse them afterward and keep them in a small amount of syrup or water to prevent sticking.

Dice the strawberries into small pieces. Combine them with honey and water, bring to a gentle simmer, and cook for 4–5 minutes until the berries soften. Then stir in the vanilla extract and remove from heat.

If you prefer a smoother syrup, lightly pulse the strawberry mixture with an immersion blender. If you like the texture of the berries, you can skip this step.

Gently warm the soft tofu either by steaming it or in the microwave without bringing it to a boil.

Divide the warm tofu among glasses or bowls. Top with the strawberry syrup and tapioca pearls. Serve immediately while the tofu is still warm and the syrup is aromatic.
