Method

Season the lamb shoulder with a spice blend of sweet paprika, cumin, ground coriander, rosemary, dried garlic, mixed ground peppers, and salt.

Prepare the bed of vegetables: roughly chop a couple of heads of garlic, carrots, and red onions.

Toss potato wedges with seasonings (paprika, fresh garlic, basil, chili flakes, and sunflower oil) and roast at 200°C (400°F) for 15-20 minutes.

Roast the lamb shoulder on top of the vegetable bed with rosemary, pouring in 500 ml of broth or boiling water.

Make a salad using cucumbers, bell peppers, radishes, and tomatoes, dress with olive oil and balsamic vinegar, and garnish with cilantro and mint.
