Method
Peel your garlic cloves and make sure they're all in good shape—no blemishes or soft spots.
Split the chili peppers lengthwise, remove the seeds, and chop them into bite-sized pieces.
Pack the garlic and chili tightly into a clean jar.
Boil water for your brine, let it cool to room temperature, then dissolve salt into it.
Add black peppercorns to the jar, pour in the brine, cover loosely with a lid or cheesecloth, and leave it on the counter at room temperature.
Let it ferment for about 5 days, then seal the jar with a lid and move it to the fridge.
