Method

Soaked the cucumbers in ice-cold water for 2 hours for extra crunch. Rinsed all the greens. Cut the horseradish root into rounds.

Placed half of the greens, horseradish, and spices at the bottom of the pot, then packed the cucumbers tightly. Topped with the remaining horseradish and spices, and covered with the rest of the greens.

Dissolved the salt in 2 liters of cold water.

Poured the brine over the cucumbers so they were completely submerged. Weighted the cucumbers down with a plate topped with a jar of water to keep them from floating up and touching the air.

Kept them at room temperature for 3 days, then transferred them into jars and moved them to the refrigerator after 3 days.
