Method
Slice the cabbage finely and grate the carrots.
In a large bowl, toss the vegetables with salt and sugar.
Transfer to a clean jar, pressing down gently—don't crush it.
Pour in cold water until it reaches the top of the jar.
Set the jar on a deep plate—the cabbage will ferment actively.
Ferment for 3–4 days at room temperature.
Poke the cabbage with a wooden stick twice a day to release gas.
Once fermentation is complete, cover with a lid and move to the fridge or cellar.
