Eggplant-Wrapped Meatballs in Tomato Sauce

Method

Slice the eggplants lengthwise into thin strips

Sprinkle with salt and soak in water for about 30 minutes to remove the bitterness

Rinse, pat dry, and lightly pan-fry until golden

For the meatballs, mix ground meat, grated onion, garlic, red pepper paste, spices, and fresh herbs

Mix everything well and shape into small oval meatballs

Lightly brown the meatballs in a pan or bake at 400°F for about 12–15 minutes

For the sauce, heat olive oil, add garlic, tomato paste, and tomatoes

Season with salt and pepper, add oregano or thyme, and simmer for about 5 minutes

Pour the tomato sauce onto the bottom of a baking dish

Take 2 eggplant strips, place a meatball in the center, and wrap carefully

Arrange the rolls seam-side down in the baking dish

Top with some mozzarella

Bake at 350°F for about 30–35 minutes until the eggplant is tender and the cheese is golden and bubbly
