Method

Whisk the flour together with the baking powder. Whip the egg with the sugar until pale and fluffy. Add the glucose syrup or trimoline and continue to whip.

Add the desired food coloring. Gently fold in the flour and baking powder mixture using a spatula with bottom-to-top motions.

Pour the batter into paper disposable cups, filling them about 1/3 full.

Bake in the microwave at 700–800 W for about 1 minute. It is best to bake one cup at a time. The baking time may vary slightly depending on your microwave.

Let the sponge cool. To make it easier to remove, you can tear the cup along the seam or make a cut on one side.

Tear the sponge apart by hand into small, irregular pieces—this will give it a texture that looks as much like real moss as possible.
