Method

Soak the raisins in orange juice for 20–30 minutes, then pat dry with paper towels.

Dissolve the yeast in warm milk, add 1 tablespoon sugar and 2 tablespoons flour, let sit for 15–20 minutes.

Whisk eggs with sugar and vanilla sugar, add salt, zest, melted butter, and the yeast mixture. Gradually mix in flour, knead the dough, and let it rise in a warm place for 1–1.5 hours.

Divide the dough into 4 pieces, roll out into thin sheets, brush with butter, sprinkle with sugar, raisins, and candied fruits, then roll into logs.

Cut the logs lengthwise without going all the way through, twist into a spiral shape, and place in baking molds. Let proof for 30–40 minutes.

Brush the kulichs with an egg and milk wash, then bake at 350°F for 40–45 minutes.
