Method

Combine the egg white with the powdered sugar (220 g), place over a double boiler, and heat to 55–60°C.

Remove from heat and begin whipping with an electric mixer, gradually adding the starch mixed with the remaining powdered sugar (30 g).

Whip to the desired consistency: a bit runnier for drips, or stiffer for piping intricate designs.
