Duchess Honey Cake

A delicate homemade cake with honey sponge layers, sour cream frosting, walnuts, and prunes. A wonderful dessert for a festive table or a family tea time.

In the mixer bowl, combine the eggs and beat until fluffy. Then add the sugar and beat until almost completely dissolved, followed by the honey and salt. Beat everything together once more.

In a separate bowl, mix the baking powder and all-purpose flour. Fold this mixture gently into the egg batter using a spatula.

Take a baking pan and place it in the oven preheated to 180°C (350°F). Bake until the sponge cake is done.

Rinse the prunes and chop them into small pieces. Finely chop the walnuts.

Let the finished sponge cake cool, then remove it from the pan.

Let's make the frosting. Place the sour cream in the mixer bowl and beat on medium speed until fluffy. Then add the powdered sugar and stabilizer. Beat everything for a little longer.

Cut the sponge cake horizontally into 3 layers.

Assemble the cake. Take the platter you will use for assembly. Grease it with a bit of frosting and place the first layer down. Spread with frosting, sprinkle with walnuts, and add the prunes. Add a little more frosting on top. Then cover with the next sponge layer and repeat the process. Do the same for the third layer.

Coat the top layer with frosting, and frost the sides of the cake as well.

Coat the assembled cake with walnuts all around, and garnish the top with a small amount of prunes.

Leave the cake to soak for 3–4 hours, then serve.
