Homemade varenyky with potato and cottage cheese fillings, made with a hot-water dough that is wonderfully soft and easy to work with.

Method

Place the flour in a bowl and make a well in the center. Add the egg, melted butter, and salt.

Mix thoroughly until well combined and crumbly.

Gradually pour in boiling water, stirring the dough with a spoon.

Gather the dough with your hands and knead it, then place it in a bag and let it rest for 15-20 minutes.

Make the fillings: add butter and onions to the mashed potato and mix well.

For the cottage cheese filling, simply mix all the ingredients together until ready; use a blender if the curd is chunky.

Roll the dough into a log and cut it into pieces.

Roll out each piece, dust lightly with flour, and shape the varenyky.

Cook fresh varenyky for 3-4 minutes, or 6-8 minutes if frozen.
