Method

Cut the beef into large chunks.

Chop the potatoes, carrots, onions, bell peppers, and tomatoes into large pieces, and cut the cabbage into large wedges.

In a cauldron or heavy-bottomed pot, layer the beef first, followed by the onions, carrots, potatoes, bell peppers, tomatoes, and cabbage.

Season each layer lightly with salt, pepper, and cumin.

Add the minced garlic and a portion of the fresh herbs.

Mix the tomato paste into a glass of water and pour it over the meat and vegetables.

Cover with a lid and simmer over low heat for about 2 hours without stirring.

Before serving, garnish with fresh parsley and cilantro.
