Method

Separate the egg whites from the yolks and whip the whites until stiff peaks form.

Fold the coconut flakes and 1 packet of stevia into the whipped whites, gently stirring in a clockwise motion.

Preheat the oven to 300 °F (150 °C).

Line a baking pan with parchment paper, spread the white batter evenly, and bake for 50 minutes until golden.

Combine the milk and 2 egg yolks, cooking and stirring for about 10 minutes.

Bloom the gelatin, then stir half of it into the custard mixture, mix well, and remove from the heat.

Combine the quark (or smooth cottage cheese), stevia, and custard base, blending until light and airy.

Take the crust out of the oven, gently remove from the pan, spread a thick layer of the cream on top, and chill in the fridge while you make the glaze.

Melt 3 tbsp of coconut oil, 2 tbsp of cocoa powder, and the remaining half of the gelatin in a double boiler. Coat the top and sides of the cake, then return it to the fridge to set.
