Method
Separate the egg whites from the yolks and whip the whites until you get stiff peaks.
Fold the coconut flakes and one packet of stevia into the whites, mixing gently in a circular motion with a folding technique.
Preheat your oven to 150°C (300°F).
Line a baking pan with parchment paper, spread the meringue mixture into it, and bake for about 50 minutes until golden brown.
Combine the milk and two egg yolks, then heat gently while stirring for about 10 minutes to cook through.
Bloom one packet of gelatin, then stir half of it into the cream mixture, mix well, and remove from heat.
Blend the cottage cheese, one packet of stevia, and the cooked cream mixture together in a blender for a good while until you get a smooth mousse consistency.
Take the cake base out of the oven, remove it from the pan, and apply a thick, generous layer of the mousse. Pop it in the fridge while you prepare the glaze.
Over a double boiler, melt 3 tablespoons of coconut oil, 2 tablespoons of cocoa powder, and the remaining gelatin, adding a splash of milk if needed. Coat the entire cake—top and sides—with this glaze and return it to the fridge to set.
