Delicious Cottage Cheese Pound Cake
A tender homemade cottage cheese cake with dried fruits and a jam filling. A great option for tea time or a hearty snack.

Method
Preheat the oven to 180°C (350°F). Grease a 20–22 cm loaf pan with butter or line it with parchment paper.
In a bowl, combine the sugar, vanilla sugar, and a pinch of salt. Add the egg and beat well until light and foamy.
Pour in the vegetable oil, add the cottage cheese, and mix until smooth. If the cottage cheese is lumpy, you can pulse it briefly with a blender or mash it thoroughly with a fork.
Mix the flour with the baking powder, sift it into the cottage cheese mixture, and gently stir until a uniform batter forms.
Add the dried fruits (you can soak them in hot water beforehand and pat them dry) and gently fold them in.
Spread half of the batter into the pan, add 2 tablespoons of jam in a thin layer, top with the remaining batter, and smooth the surface.
Bake in the preheated oven for 40–45 minutes until golden brown and a skewer inserted comes out clean. If the top browns too quickly, cover it with foil.
Let the cake cool in the pan for 10–15 minutes, then transfer it to a wire rack. Optionally, brush with melted butter or extra jam for a glossy finish.
