Method
For the custard, whisk together the eggs, sugar, starch, and salt in a saucepan.
Next, pour in the warm milk.
Cook over medium heat until thickened.
Cover the resulting cream with plastic wrap and chill in the refrigerator.
For the dough, combine the flour, powdered sugar, salt, baking powder, and cold butter.
Rub the butter into the flour mixture, add the egg, and knead into a dough.
Chill in the refrigerator for 30 minutes.
Next, divide the dough into two unequal parts, roll them out, place into the baking pan, and press down firmly.
Spread the fruit preserves, top with the custard, smooth it out, and cover with the second piece of dough.
Crimp the edges tightly, trim the excess, and brush with egg yolk.
Bake for 35 minutes at 180°C (350°F).
Let cool completely.
