Method

Sort through the wild garlic, rinse thoroughly in cold water to remove any dirt.

Pat dry with a paper towel.

Chop finely or leave the shoots whole.

Add the salt and mix well, pressing down slightly.

Transfer the mixture into a jar, packing it tightly, and sprinkle salt on top.

Cover with a lid and place in a cold spot. In 2–3 days, the pickles will be ready.
