Cucumbers in Their Own Juice

A preservation method for overgrown cucumbers with garlic and dill. A crunchy snack that keeps in a cool place and can be served on its own or used as a soup base.

Method

Coarsely grate the overgrown cucumbers, add salt (2 tbsp per 1 kg), and optionally mix in minced garlic and dill. Toss well.

Place a dill inflorescence and a layer of grated cucumbers at the bottom of a clean 3-liter jar.

Alternate layers of whole cucumbers, grated cucumbers, and garlic (optional).

Finish with a layer of grated cucumbers, pour the remaining juice over them, and top with a horseradish leaf.

Seal tightly with a plastic lid. If horseradish is not available, coat the inside of the lid with prepared mustard.

Wipe the jar clean of any spills and store in a cool place.
