Crispy lavash triangles stuffed with a juicy cottage cheese and spinach filling. A fantastic hot snack or a great addition to soups.

Method

Wash the spinach thoroughly, pat dry, and finely chop.

Combine the farmers cheese (or curd) with the spinach and mix well; season with a pinch of salt and pepper if desired.

Cut the lavash into long strips, about 8–10 cm wide.

Place a small amount of filling at the edge of each strip and fold into a triangle, continuing to fold the lavash successively to the end of the strip.

Arrange the triangles on a baking sheet lined with parchment paper.

Brush each triangle with an egg yolk and sprinkle with sesame seeds.

Bake in a preheated oven at 180°C (350°F) for 15–20 minutes until golden brown and crispy.

Serve hot or warm as a standalone appetizer or alongside soups.
