Method

Pack the bottom of a 5-liter plastic bottle with fresh herbs and leaves (horseradish, dill, and blackcurrant leaves).

Tightly pack the cucumbers into the bottle.

Top the cucumbers with the remaining herbs.

Add the salt and fill the bottle with clean, filtered, or distilled water.

Cover the opening with cheesecloth and place the bottle in a tray or basin to catch any brine that bubbles over during fermentation.

Leave them to ferment at room temp for 6 to 7 days.

Drain out the cloudy brine, fill with fresh water, and gently rinse the pickles 2 to 3 times.

Top off with fresh water and store in a cool place.
