Crispy Pickled Cucumbers

Method

Wash the cucumbers and trim both ends.

Soak in cold water for at least 4 hours.

On the bottom of a 3-liter jar, layer a carrot cut into 4 pieces, 1 onion, a few garlic cloves, a horseradish leaf, a currant leaf, a cherry leaf, a dill head, and a few peppercorns.

Pack the cucumbers in and pour boiling water over them. Let sit for 15 minutes.

Drain the water into a pot, add salt and sugar, bring to a boil, then add vinegar. Pour the hot brine immediately over the cucumbers in the jar, seal tightly, and wrap with a towel to cool slowly.

Once the jars cool completely, store them in a cool place.
