Method

Cook the quinoa.

While it's still hot, toss in finely chopped spinach and garlic, mix well, season with salt and pepper, and drizzle with olive oil.

Add a couple of tablespoons of water, give it a stir, bring it quickly to a boil, then pull off the heat.

Meanwhile, cut two circles from your lavash sheet about the size of a dinner plate, then cut each one into 4 wedges.

Spoon some of the quinoa-spinach mixture onto each piece, fold it in half.

Sear both sides on a dry skillet until crispy, then arrange all 8 pieces on a plate in a circle.

Drizzle the top with a spicy chili or tomato sauce if you like.
