Method

Cut the chicken breast into bite-sized pieces, season with salt, and add grated ginger (or garlic).

Prepare the batter and coat the chicken pieces in it.

Combine the soy sauce, sugar, honey, and rice vinegar.

Heat vegetable oil and fry the chicken pieces in batches, keeping them spaced apart so they don't stick together and become crispy.

In a skillet, sauté the minced garlic, pour in the sauce, bring to a boil, add the cornstarch slurry (starch dissolved in water), and simmer until thickened, stirring constantly.

Add the crispy chicken to the sauce, simmer over low heat for about five minutes, garnish with sesame seeds and green onions, and serve immediately.
