Crispy Cheese Baskets with Calamari

Method

Prepare the cheese baskets first so they can set.

Lightly grease the bottom of a plate with butter, grate cheese over it, and shape into a 10–12 cm disc. Microwave for 20 seconds or heat in the oven until the cheese melts.

Once slightly cooled, peel off the disc, drape it over an inverted glass to form a cup shape, and chill in the refrigerator. Repeat with the remaining cheese.

Clean the calamari, remove the quill, and rinse. Place in a bowl and pour boiling water over them. Repeat this twice. Remove and cut into half-rings or julienne strips.

Cut the cucumbers into julienne strips. Finely chop the eggs.

Mix all the ingredients together, season with salt if needed, dress with mayonnaise, and chill.

Just before serving, spoon the salad into the cheese baskets. Garnish with olives, lettuce leaves, and lemon slices. Serve right in their cheese bowls.
