Crispy Cabbage-Packed Pickled Tomatoes for Winter
Juicy, sweet tomatoes nestled in crunchy cabbage, made without boiling or sterilization. A fantastic homemade pickle for the winter with a zesty kick.

Method
Layer the bottom of clean jars with: bay leaves, allspice, black peppercorns, hot pepper rings, followed by a layer of bell pepper and onion, and sprigs of dill and parsley.
Add a layer of shredded cabbage and pack it down tightly.
Add the tomatoes, having first pierced each one near the stem.
Repeat the layers: cabbage — tomatoes — cabbage — pepper strips.
Pour boiling water over the jars, cover with lids, and let sit for 15–20 minutes.
Drain the water into a saucepan, add salt and sugar, bring to a boil, and simmer for 2–3 minutes.
Pour in the vinegar and boil for another 1 minute.
Fill the jars to the very top with the hot brine and seal.
Turn upside down and wrap in a blanket until completely cooled.
