Method
Whisk your eggs with sugar until you get a fluffy, pale foam. Pour in the milk and mix well.
Sift the flour and fold it into the egg and milk mixture, stirring until completely smooth.
Add the baking powder to boiling water, then quickly pour it into the batter and whisk vigorously — the batter will become airy and fizzy.
Stir in the vegetable oil. Let the batter rest for 5 minutes.
Cook on a well-heated skillet, flipping once, until both sides are golden brown.
