Method

Cook the pasta in boiling salted water until al dente (following the package instructions). Important: before draining, make sure to scoop out about 120 ml of the pasta water into a mug—we will need it!

While the pasta is cooking, dice the bacon and place it in a hot, dry skillet. Fry until golden and crispy.

In a deep bowl, mash the avocado flesh with a fork. Add the egg yolks, grated cheese, and a pinch of salt and pepper. Pour in 50-70 ml of the hot reserved pasta water. Mix until completely smooth and creamy. If the sauce seems too thick, add a little more pasta water.

Transfer the hot, freshly cooked pasta into the skillet with the bacon. Pour in the avocado cream and toss quickly. The residual heat from the pasta will do its magic, making the sauce silky and enveloping.
